Our interview with winemaker Phillip Staehle. In 2004, Phil started Enkidu Wines, pulling the name from the Epic of Gilgamesh. Phil continued to refine his winemaking skills, producing consistently delicious wines that speak to the unique character of their origin. Phil’s integrity as a winemaker and his commitment to sustainably sourcing and producing wine have grown over time. Eschewing additives, using native yeast, and maintaining long-standing relationships with sustainable vineyards allow the wine to express its true self. We have had the pleasure of writing a review on Enkidu Winery before, as well as a review of their phenomenal 2021 Syrah, and if you ever find yourself at their winery or tasting room, also make sure to check out Honrama Cellars, which shares a tasting area!
