There are steakhouse dinners, and then there are Hank’s steakhouse dinners. Tucked into the Green Valley Ranch Resort in Henderson, Hank’s Fine Steaks & Martinis is the kind of restaurant that doesn’t just aim to impress—it grabs your taste buds, your Instagram feed, and your inner gourmand and says, “Buckle up.” Named after legendary Las Vegas Sun publisher Hank Greenspun, the restaurant brings a touch of Vegas history to the table while dishing out some seriously decadent surf-and-turf classics.
With 1,100+ glowing Google reviews and a solid 4.5-star rating, Hank’s clearly knows its audience. Whether you’re celebrating a birthday, an anniversary, or just the fact that it’s Friday (or any day of the week), this place sets the scene for a memorable (and indulgent) night out.
From the moment you’re greeted by the host to the last spoonful of tableside banana foster, the service here is as polished as the martini glasses. The food? Well, we’ll get into that in just a moment—but let’s just say if you leave hungry, that’s on you.
“Classy but not stuffy” is how Hank’s describes its vibe, and honestly, that’s spot-on. The space is elegant but approachable, with rich wood tones, velvet seating, and just enough sparkle to remind you that, yes, you are in a casino resort—but a very tasteful one.
The dining room is spacious, with cozy booths lining the perimeter and beautifully set tables sprinkled throughout. The lighting is warm and flattering, and there’s a low hum of energy that makes you feel like something special is about to happen. It’s not quiet, but it’s not rowdy either—more of a celebratory buzz that comes from people who are eating well and drinking better.
There’s also a martini bar that deserves its own shoutout. It’s the kind of spot where you could easily kick off a date night or linger with friends over happy hour cocktails. Speaking of which, happy hour runs daily from 4 to 7 p.m., and it’s a smart way to get a little Hank’s preview before committing to the full steakhouse experience.
Let’s start with the headline here: the steak and lobster for two. It’s a $350 showstopper of a meal that absolutely delivers on the drama and the deliciousness. If you’re here to go big (and why wouldn’t you be?), this is the move.
The meal kicked off with a Steakhouse Salad that somehow managed to feel both classic and elevated. Romaine lettuce got dressed up with creamy white French dressing, chunky avocado, smoky applewood bacon, gorgonzola crumbles, and fresh tomato. It was crunchy, creamy, salty, and sweet all at once—basically, everything you want in a salad when you’re about to eat a steak the size of your forearm.
And what a steak it was. The Mishima Reserve Wagyu Filet Mignon was melt-in-your-mouth tender, cooked to a perfect medium rare, and seasoned with just the right amount of restraint to let the meat speak for itself. You know how some steaks can be so rich they sort of wear you out halfway through? Not this one. Every bite stayed juicy and flavorful all the way to the last forkful.
But let’s not bury the lead. The 28-ounce Australian lobster tail that came with this meal? It was, without exaggeration, the largest we’ve ever laid eyes on. This tail looked like it had been working out. It was meaty, sweet, and impossibly tender—and it made for the ultimate pairing with that Wagyu filet.
For sides, we went full trio. The mushrooms were a seasonal mix of forest varieties, sautéed with bourbon for a little earthy depth and a nice boozy kick. The Aspen Corn brought the party, with sweet kernels of white corn dressed in lime butter, cotija cheese, and a chipotle aioli that had a little sass to it. If you’re spice-sensitive, just a heads up—it’s got a kick. And then there were the au gratin potatoes, which were an unexpected standout. Smoked cheddar, poblano peppers, and bacon all layered into rich, bubbly perfection. This is the kind of side dish that turns a “fine steakhouse” into a “we’re coming back here next month” kind of place.
For dessert, we couldn’t resist the Tableside Banana Foster, and oh man—this was theater. Banana bread pudding got a generous pour of Meyer’s dark rum, a touch of caramel, a hit of cinnamon, and a scoop of sour cream ice cream that pulled the whole thing together. It was rich and warm and a little boozy, and it ended our meal on the exact note we were hoping for.
To drink, we brought our own bottle—a 2019 Catena Zapata Malbec Argentino. It paired beautifully with the meal, especially the filet. Deep, dark fruit, a little smokiness, and a velvet-soft finish that stood up to both the meat and the spice in the sides. (You can read our full review of this wine here.)
Our server, Duncan, was attentive without being overbearing, and Sommelier Brian was friendly and knowledgeable, especially when it came to confirming our wine wasn’t already on their list. Both added to the polished but relaxed vibe that Hank’s pulls off so well.
If you’re a wine lover (and we know many of you are), you’ll be happy to know that Hank’s has a corkage policy that’s as thoughtful as it is straightforward: $35 for up to two 750ml bottles or one magnum. The only catch? Your bottle can’t be on their wine list, which is fair. The list is extensive, so check ahead if you’re bringing something special. We had no trouble with our Catena Zapata, and Brian, the sommelier, gave it a quick nod of approval before uncorking it tableside.
Hank’s Fine Steaks & Martinis is the kind of restaurant that knows exactly what it is—and leans into it. This is upscale dining with a Vegas twist, and everything from the atmosphere to the portion sizes reflects that. You don’t come here for dainty plates or culinary experiments. You come here to feast. And in that department, Hank’s absolutely delivers.
Whether it’s a big date night, a milestone celebration, or just a Thursday where you feel like treating yourself, this is a restaurant that understands the assignment. Is it pricey? Sure. But for the quality of food, the level of service, and the sheer spectacle of it all, we’d argue it’s worth every penny.
So go ahead. Order the lobster tail. Get the bananas foster. Bring that bottle you’ve been saving. Hank’s is here to make your night a great one—and if you play your cards right, it just might become one of your go-to spots in Henderson.
